1. Pyaaz ki Kachori
Stuffed with onion filling, this crispy snack (delicacy of past) is something that your taste buds will never get tired of. It is spicy, slightly sweet (a contribution of cooked onions), a bit tangy, soft from inside, deliciously crunchy from outside, in short Pyaaz kachori is everything an ideal snack should be. Served hot with tart tamarind chutney, there are only a few things that can be compared with this traditional Rajasthani snack.

2. Mawa Kachori
A dessert as exotic as this state of Thar desert, Mawa Kachori is the only sweet version ever made of Indian pastry (kachori). Filled with sweetened mawa (or khoya), and variety of dry fruits, Mawa kachori has similar crispy crust as one would expect of any Kachori. However, unlike regular kachoris, Mawa Kachori’s crust is dipped and soaked in sweet aromatic syrup.

3. Dal ki Kachori/Hing ki Kachori
Dal kachori is perhaps the most known Kachori in all of the north India. The primary ingredient of the filling that goes into the making Dal kachori is lentils. Though most of the times, urad dal (black lentils) are used for the purpose, sometimes yellow Mogar lentils too are used. One exclusive trait of this usual Dal kachori that can be associated with Rajasthani cuisine is the presence of asafetida. Not all the dal kachoris made in Rajasthan has it, only the ones that are available by the name hing ki kachori, consists noticeable amount of asafetida. This variation of dal kachori is often enjoyed with yoghurt by the people of Rajasthan.

4. Aloo Kachori
Aloo Kachori is made with plain flour dough and filling with potatoes and spices.
